If I have a weakness to share it has to be fresh bread. I love the smell of fresh bread baking in the oven, removing it and cutting a piece while its still warm, of course we southern girls immediately hit it with a little butter, pour a cup of tea and enjoy!  These are my family favorites!
Zucchini Bread
3 eggs
1 cup vegetable oil
1 1/2 cups sugar
1/2 cup firmly packed brown sugar
2 tsp. vanilla
3 cups all purpose flour
1 tsp baking soda
1/4 tsp baking powder
1 tsp salt
3 tsp cinnamon
1/2 tsp nutmeg
2 cups fresh grated zucchini I leave the skin on
Preheat oven 350 degrees
Prepare  2 loaf pans by lightly greasing and dusting with flour.
Mix oil and sugars, add eggs and vanilla and mix well.  In a separate bowl combine all dry ingredients and mix well. Slowly add to sugar mixture until well blended. Fold in zucchini. Pour into loaf pans.
Bake about one hour.

Jalapeno Cornbread
2 cups self rising cornmeal
2 cups milk
2 eggs, well beaten
1 large onion, minced
5 - 6 jalapeno peppers, finely chopped
1/4 lb grated sharp cheddar cheese
1 tsp kosher salt
1/2 stick butter, softened
Preheat oven 375 degrees.
Mix all ingredients together until well blended. Pour into baking pan.
Best cooked in an iron skillet but if you don't have one use a heavy baking pan. I place my iron skillet in oven prior to adding my cornbread mix. I pour about 5 tsbp oil in pan and allow to get hot in oven. Remove and pour in mix, return to oven and bake  20 - 25 minutes. Serve while hot!
Granny's Old Fashioned Iron Skillet Cornbread
1/4 cup vegetable oil
1 1/2 cups self rising corn meal
1/2 cup self rising flour
1/4 cup sugar
1 tsp baking powder
1 cup buttermilk
2 eggs, beaten
4 strips thick sliced bacon
Preheat oven 400 degrees
In cast iron skillet, cook bacon until crisp. Cool and crumble in bottom of pan with bacon drippings. Do not drain. In bowl combine all dry ingredients then mix all liquid ingredients and mix together well. Pour over bacon bits in skillet. Bake 20 - 25 minutes at 400 degrees.

Banana Nut Bread
1 cup ripe mashed bananas
1 cup sugar
1/2 cup butter, softened
1 1/2 cups  flour
1 tsp baking soda
1/2 tsp salt
1 egg
1 tsp butter walnut flavoring (or vanilla)
1/2 cup chopped wlanuts or pecans
Preheat oven 350 degrees
Prepare loaf pan lightly greased and dusted with flour
Mix all ingredients together and beat well. Bake about 50 minutes or until a toothpick inserted in middle comes out clean.

Monkey Bread
5 cups all purpose flour
3 envelopes active dry yeast
2 tbsp sugar
1 tsp kosher salt
1 1/2 cups milk
1/3 cup unsalted butter + about 1 cup melted butter
1 egg
In large mixing bowl, stir together 1 1/2 cups flour, yeast, sugar and salt, set aside. Heat milk and 1/3 cup butter until very warm (about 120 degrees) and remove from heat and pour over flour mixture. Add egg and beat for 3 minutes at medium speed, scraping bowl occasionally. Add 1 cup flour and beat about 3 minutes longer. Stir in remaining 2 1/2 cups flour and mix with wooden spoon until thoroughly blended. Brush top of dough with a small amount of melted butter. Cover and let rise in warm draft free place until doubled in size, about 30 - 45 minutes. Turn out on floured surface and knead lightly until smooth. Divide dough in half. Roll out each into about 18 x 12 inch rectangle. Cut into 3/4 inch strips, then crosswise in 3 inch pieces. Dip each piece in melted butter, and lay into a 10 inch tube pan, leaving about a 2 inch space between each piece as you work your way up to the next row in pan. Next row fill in the2 inch space with a new piece of dough until you have used all pieces. Cover once again and let rise about 1 1/2 hours. Bake on bottom rack of oven at 425 degrees for about 20 minutes or until golden brown.  Turn out on rack. Serve in basket, rolls will just pull apart as you have arranged them. These are delicious.
Gingerbread
1 cup sugar
1 egg, beaten
1/2 cup shortening
1/2 cup baking molasses
1 tsp ground ginger
2 cups flour
1 tsp baking soda
1/2 tsp salt
1 cup boiling water


Funnel Cakes
2 eggs, beaten
1 1/2 cups whole milk
2 cups flour
1 tsp baking powder
1/2 tsp salt
fresh oil for deep frying
Confectioners sugar for dusting
Combine eggs, milk, flour, soda and salt in mixing bowl, stirring until smooth.  Pour oil into heavy 2 quart pot. Oil needs to be about 3 inches deep. Or use deep fryer.  Heat oil to 375 degrees.  Pour 1/2 cup batter into funnel, holding finger over bottom opening blocking batter. Slowly drizzle batter into hot oil starting in center and circling around to form a spiral. Deep fry until golden brown. Drain well on paper towels. Sift confectioners sugar over top. You may also mix cinnamon with powdered sugar for a different flavor. ENJOY!
Perfect Pizza Dough
5 cups flour
1/4 cup vegetable oil
1 1/2 tsp kosher salt
1 tsp sugar
1 egg, beaten
1 cup warm water
1 tbsp active dry yeast
Dissolve yeast in warm water in a glass bowl. Stir in sugar, oil, egg, salt and flour.  Knead until smooth. Let rise in warm draft free place for about 30 minutes. Punch douh down. Spread into two non stick round pizza pans. Top with your favorite marinara and toppings. Bake 425 degrees for 15 - 20 minutes or until cheese is melted and dough is golden brown.
Fruit Turnovers
2 packages active dry yeast
1 cup warm water
6 cups flour
3 tbsp sugar
1 tsp kosher salt
2 cups butter, softened
3 eggs
Your choice of fruit pie filling. Cherry, peach and apple are great choices.
Dissolve yeast in warm milk. In a large separate bowl combine flour, sugar and salt. Cut in butter until crumbly, about pea size. Beat eggs in yeast and milk mixture. Add to flour mixture and mix well. Let rise in draft free warm place about 2 hours. Roll out on well floured surface. Cut into squares and fill each center with fruit filling, fold over to form a triangle shape and seal edges either by tucking dough with fingertips or crimping with edge of fork.  Sprinkle each top with about 1/2  tsp granulated sugar,
if desired.  Bake at 350 degrees in preheated oven for about 12 minutes.
Cream sugar and shortening, add egg and mix until light and fluffy. Stir in molasses, flour, ginger, salt and baking soda. Add boiling water, mixing well. Pour into lightly greased and flour dusted baking pan. Bake at 350 degrees for about 30 minutes.
