MaMa's Cowboy Cookies
1 cup sugar
1 cup brown sugar
2 eggs
1 cup butter
1 teaspoon vanilla
2 cups flour
1 teaspoon baking powder
1 teaspoon baking soda
1/2 teaspoon salt
2 1/2 cups rolled oats
2 cups chocolate chips
In a large bowl add, sugar, brown sugar and eggs. Melt butter and pour in bowl with sugars and eggs, mix well and stir in vanilla. Add flour, baking powder, baking soda and salt, mixing well. Stir in oats and chocolate chips. Drop dough by rounded tablespoons about 2" apart onto an ungreased cookie sheet. Bake at 350 degrees for 10-12 minutes or just until the edges of the cookies begin to turn golden brown.
Black Bottom Cupcakes
Filling:
1 (8 ounce) package cream cheese, softened
1 egg
1/3 cup sugar
1/8 teaspoon salt
1/2 cup chocolate chips
Beat together the cream cheese, granulated sugar, and egg until smooth. Stir in the chocolate chips. Set aside.
Cupcake:
1 1/2 cups flour
1 cup sugar
1/4 cup unsweetened cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 cup water
1/3 cup vegetable oil
1 tablespoon vinegar
1 teaspoon vanilla
In a medium bowl sift together the flour, sugar, cocoa powder, baking soda, and salt. In a separate bowl, mix together the water, oil, vinegar, and vanilla. Make a well in the center of the dry ingredients and stir in the wet ingredients, stirring until just smooth.
Fill paper lined muffin cups 1/3 full with cupcake batter and top with a generous dollop of cream cheese filling. This will fill the cups almost completely which is fine. Bake for 25 minutes at 350 degrees, or until the tops are slightly golden brown and the cupcakes feel springy when gently pressed.
These cupcakes should be stored in the refrigerator and will stay fresh for 3 or 4 days, but rarely do they last that long before they are all gone!

She is a GREAT cook and has plenty of grandbabies who line up in her kitchen to see what MaMa's baking, they also love to help! Try these with your kids or grandkids and I am sure they will become a favorite in your kitchen too.
MaMa's Brownies
1/2 cup melted butter
1 cup sugar
1 teaspoon vanilla
2 eggs
1/2 cup flour
1/3 cup cocoa
1/4 teaspoon baking powder
1/4 teaspoon salt
Blend melted butter, sugar and vanilla in large bowl. Add eggs; using a wooden spoon, beat well.
Combine flour, cocoa, baking powder and salt; gradually blend into egg mixture.
Spread in greased 9-inch square pan. Bake at 350 degrees for 20-25 minutes or until brownie begins to pull away from the edges of the pan. Cool and frost with Creamy Brownie Frosting. Cut into squares.
Creamy Brownie Frosting
3 tablespoons butter
3 tablespoons cocoa
1 tablespoon light corn syrup
1/2 teaspoon vanilla
1 cup confectioners' sugar
1-2 tablespoons milk
Cream butter, cocoa, corn syrup and vanilla in a small mixer bowl. Add confectioners' sugar and milk; beat to spreading consistency.
Monster Cookies
The cookie monsters that hang around my house really gobble these up fast!
1/4 cup butter flavored shortening
3/4 cup peanut butter
3/4 cup brown sugar, packed
1/2 cup sugar
2 eggs
1 teaspoon vanilla
1 teaspoon baking soda
1/2 cup flour
2 1/2 cups oatmeal
1/2 cup milk chocolate chips
1/2 cup M&M's (plus a few extras for decoration)
In a large bowl, cream shortening and peanut butter together and add brown sugar and sugar. Beat in eggs and vanilla. Add baking soda, flour and oatmeal, mixing well. Stir in chocolate chips and M&M's. Drop dough by rounded tablespoons about 2" apart onto an ungreased cookie sheet. Flatten slightly by pressing the dough with the bottom of a glass and press three extra M&M's on the top of each for decoration. Bake at 350 degrees for 10-12 minutes or just until the edges of the cookies begin to turn golden brown.
Sugar Cookie Bars
1/2 cup butter, softened
1 cup sugar
2 eggs
1 teaspoon vanilla
2 1/2 cups flour
1/2 teaspoon salt
1/4 teaspoon baking soda
Cream butter and sugar until fluffy. Add eggs and vanilla; mix well. Stir in flour, salt and baking soda and mix just until combined. Spread on a greased 9x13 baking pan. Bake at 350 degrees for 15 -20 minutes, until light golden brown. Let cool.
Frosting
1/4 cup butter, softened
1/4 cup shortening
1/2 teaspoon vanilla
2 cups powdered sugar
2 tablespoons milk
Combine butter and shortening until smooth and creamy. Add vanilla. Beat in powdered sugar and milk until smooth and spreading consistency.
MaMa's Whippersnappers
3/4 cup brown sugar
3/4 cup sugar
1 1/2 cups shortening
1/2 cup peanut butter
2 eggs
1 1/2 teaspoon vanilla
1 1/2 cups flour
1/2 teaspoon baking soda
1/2 teaspoon salt
2 3/4 cups quick cooking oats
1 package chocolate chips
1/2 cup chopped pecans (optional)
Preheat oven to 350 degrees. In a large mixing bowl, cream both sugars, shortening and peanut butter. Add eggs and vanilla and mix well. Add flour, baking soda and salt to sugar mixture. Stir in oats, chocolate chips and pecans. On baking sheet, drop dough by teaspoonfuls and bake 12 to 14 minutes or until cookies begin to brown on edges.
Pecan Sandies
1/2 cup shortening
1/2 cup sugar
1/2 cup powdered sugar
1 egg, beaten
1 teaspoon vanilla
1/4 teaspoon salt
1/2 teaspoon cream of tartar
1/2 teaspoon baking soda
1 3/4 cups flour
1/2 cup finely chopped pecans
Instructions for baking:
Preheat oven to 350 degrees. Cream vegetable shortening and sugars together until fluffy. Add vanilla and egg to sugar mixture and beat until smooth. Add flour, cream of tarter, baking soda and salt to sugar mixture, stirring until completely mixed. Dough will be stiff. Stir in chopped pecans. Roll dough into 1 inch balls and place on ungreased cookie sheet. Flatten balls to 1/4 inch thickness. Bake for 12-15 minutes, until slightly golden. Cool and store in an airtight container.
